In honor of my second most favoritest holiday of the year, I made a flourless chocolate cake, appropriately named "The Black Beast." It's been the number one on Epicurious' Buzz list for weeks now, and since The Mayor and I are on a chocolate binge, I figured why the hell not... let's just eat it and drink it until it comes out of our pores and we are found lying in pools of it with goofy grins on our faces.
The recipe is super simple, it is just 26 ounces of chocolate combined in two different ways to get a cake layer and a ganache layer. The ganache is where I went wrong, and people, I really need a chocolate class.
As you can see, my ganache is just not right. It's not glossy and shiny, and I even have swirly bits of what I am guessing to be cocoa butter solids striating through it. My guess is I heated the cream too hot, and didn't give the resulting ganache time to homogenize before dumping over the cake. I think, like the hot chocolate before, I need to really beat the hell out of it before it's ready.
This did not affect the flavor or texture however, so The Mayor and I are eating it unabated... in tiny slices of course. And I have pledged that I will continue practicing my chocolate skills until I get it right. The Mayor wholeheartedly concurs.
